ABOUT THE CHOCOLATE:
Ucayali River Cacao is located near Pucallpa, Ucayali, Peru.  Until recently this area has not been known for fine cacao, but due to the efforts of USAID and Alianza Cacao of Peru there are farmers that are abandoning coca production for Cacao, Coffee and Oil Palm. Back in 2017, we were invited down to visit Ucayali River Cacao, and were able to see first hand how much hard work that goes into crafting their specialty cacao.

    • This chocolate is made from cacao beans from Peru. We purchase this cacao in partnership with Cacao Latitudes
    • Ucayali River Cacao does not grow their own cacao; they purchase from local farmers and offer a higher price for their wet cacao (seeds & fruit removed from the pod)
    • The team at Ucayali are very skilled at fermentation and drying and it shows in the cacao we receive from them
    • The pouch is made from compostable material and printed with soy ink
    • Vegan, Soy Free

Not bitter at all and reminded me a bit of chocolate covered raisins, despite this being straight dark chocolate. My only "complaint" is that the bars are quite small so I'll have to savor what I have left.
